Chicken spice mix

Prep time: 15 minutes

Ingredients

  • 1 1/2 tsp onion powder (non-granulated is preferred)
  • 1 1/2 tsp garlic powder (non-granulated)
  • 1 tsp allspice
  • 1 tsp cayenne pepper (reduce or omit for mild version)
  • 1/2 tsp coarse ground black pepper
  • 1/2 tsp curry powder
  • 1/2 tsp dried thyme (or 1/4 powdered)
  • 1/4 tsp paprika
  • 1/4 tsp ground ginger
  • 1/4 ground ginger

Directions

Mix well and put in a shaker.

Cover one side of chicken with a spice mix. There's no salt (the brine has plenty). Place that side down on the grill and repeat on other side. Grill 3-4 minutes per side.
